Making It With Mom: Kale Salad

Ok seriously, how beautiful and refreshing does this kale salad look guys!

My mom and I came across this salad as a tiny little sample in our local Sams Club store. We both have been wanting to eat better and I’m trying to push all the health food toward her as much as I can, since sugar makes cancer grow.

It has been so hard to keep her hand out of the cookie jar and this morning we caught her at the doughnut shop! Ahh! We all laughed of course, but still, we have to keep her motivated and on the right track.

The thing I love most about this salad is that it is all prepackaged when you buy it. How cool is that! It includes the dressing, pumpkin seeds and cranberries all in the bag with the kale.

To me, the taste is like a chopped up cole slaw with added kale in the mix. The dressing consist of a white vinegar mixed with poppy seeds, dried cranberries and roasted pumpkin seeds.
